Miso soup with chicken and edamame


I have been sick this week with a cold and when Im sick I crave this soup.  It is really tasty and good for you especially for women with the 2 components of soy,  in the miso and the edamame.





Cook 1 serve of dried egg noodles in boiling water till just cooked.  Do not over do it as they are horrible  if soft.


Pour boiling water onto your frozen edamame and leave for about 10 minutes.  Pour off the water and refresh with cold so that you can handle the pods to shell.


Steam some broccoli, however much  you like or omit if you don't like.


Add 1 tablespoon of miso paste to 1 cup of cold water along with 1/4 teaspoon of bonito granules ( you could add a couple of shakes of fish sauce if you don't have the granules) and bring to a gentle boil.


 At this point, once the soup has come to a boil, put in your chopped up raw chicken, noodles on top of that, cooked veggies on top of that.  Put on the lid and simmer for about 1 min.  That should be enough to cook the chicken and heat up the noodles.



 Pour into a large soup bowl and add a few drops of sesame oil and soy sauce, a slug of sweet chillie sauce and what makes it for me the nanami togarashi or 7 peppers sprinkled on top.
I forgot to put the spring onions on the top.
